Stewed Tomatoes and Okra

Serves: 8 Serving size: 1 cup
- 8 large fresh tomatoes
- 2 tsp reduced-fat margarine
- 2 medium onions, chopped
- 1 green bell pepper seeded and chopped
- 16 oz frozen or fresh okra
- 1 cup frozen corn
- 2 tsp sugar
- ½ cup dried breadcrumbs
- Plunge tomatoes in boiling water for 1 minute to make them easier to peel. Peel and chop the tomatoes.
- Heat the margarine in a large skillet and sauté the tomatoes, onions, and bell pepper. Add the okra , corn and sugar and let simmer for 25 min. To thicken, add the breadcrumbs and stir well.
