Stewed Tomatoes and Okra

Serves: 8   Serving size: 1 cup

  • 8 large fresh tomatoes
  • 2 tsp reduced-fat margarine
  • 2 medium onions, chopped
  • 1 green bell pepper seeded and chopped
  • 16 oz frozen or fresh okra
  • 1 cup frozen corn
  • 2 tsp sugar
  • ½ cup dried breadcrumbs
  1. Plunge tomatoes in boiling water for 1 minute to make them easier to peel. Peel and chop the tomatoes.
  2. Heat the margarine in a large skillet and sauté the tomatoes, onions, and bell pepper. Add the okra , corn and sugar and let simmer for 25 min. To thicken, add the breadcrumbs and stir well.
